Eleven Madison Park to reopen with no meat on its menu

A prestigious restaurant in Manhattan is taking all meat and seafood options off its menu, citing environmental concerns.

Eleven Madison Park chef and owner Daniel Humm shared a statement on the restaurant’s website Monday that they plan to reopen next month with a new, entirely plant-based menu.

“In the midst of last year, when we began to imagine what EMP would be like after the pandemic — when we started to think about food in creative ways again — we realized that not only has the world changed, but that we have changed as well,” Hann said in his statement. “We have always operated with sensitivity to the impact we have on our surroundings, but it was becoming ever clearer that the current food system is simply not sustainable, in so many ways.”

Humm added that he and his kitchen have been working developing new dishes that are meat and dairy alternatives, like plant-based milks, butter and creams, flavorful vegetable broths and stocks, and fermented foodstuffs.

“With that in mind, I’m excited to share that we’ve made the decision to serve a plant-based menu in which we do not use any animal products — every dish is made from vegetables, both from the earth and the sea, as well as fruits, legumes, fungi, grains, and so much more,” Humm said. 

With this recent decision, Eleven Madison Park joins other prominent restaurants that are embracing plant-based menus.

The restaurant plans to reopen with indoor dining on June 10. Reservations for seating will become available on May 10.
